Hello! I'm Rafael. Behind every dish I design there are 11 years of constant evolution, fire and passion for the craft. My journey in professional gastronomy began with the most demanding foundation: training at the stoves of Freustil, where I absorbed precision, technique and absolute respect for the product.

Today, after consolidating my career, I have the honor of leading the kitchen as Head Chef at Mi Niña Lola. However, my gastronomic curiosity doesn't stop at restaurants.

My cooking is a reflection of my roots and my travels. I'm absolutely passionate about traditional Spanish cuisine, but I'm fascinated by breaking barriers, letting it converse with products and techniques from other corners of the world, especially Asia. The balance between our land's heritage and the surprise of the East is where I find my true voice as a cook.
